My daughter, Amy, recently hosted a trunk showing in her home for her friend Shannon who is an ambassador for Noonday Collections. This big-hearted company travels the world in search of artisans in underdeveloped countries. They bring their products back to our country and hold private trunk showings in homes to sell them. The proceeds help the impoverished artisans provide a living for their families.
I was happy to contribute to this cause. Offering a hand up is an act of compassion that benefits both the giver and the receiver. Our human condition compels us to help others especially when they are trying their best to help themselves and their families. The act of helping is cloaked in goodness.
I received two blessings that evening. The first was the chance to help with the Noonday project. The second was getting a glimpse into my daughter’s heart.
When Amy heard about Shannon’s involvement with Noonday, she was so touched by Shannon and her enthusiasm for this worthwhile project that she wanted to extend herself and help not only her friend, but all the women associated with Noonday. Amy understands the importance, and the mandate, of helping others.
As big as her heart is for helping others, is just as big when it comes to welcoming folks into her home. She was warm, gracious and beautiful. My heart felt like it was the size of the Goodyear blimp.
What a wonderful evening! Noonday is certainly fortunate to have such a compassionate ambassador as Shannon. Shannon is most fortunate and blessed to have my daughter as her friend.

Apple Nachos
yield: 6 to 8 servings
Amy served this dish at her Noonday trunk show as party of her fall themed decorations and food. It’s one that I will make over and over and over.
This fun dish can be made with any topping your heart desires. The idea is for apple slices to simulate corn chips which are reminiscent of nachos. Next, drizzle over a sauce or two and sprinkle your creation with any combination of baking chips and nuts.
7 to 8 cups sliced apples
7 ounces marshmallow cream
2 teaspoons butter
6 ounces caramel sauce (I used Smucker’s Topping Hot Caramel)
1/4 cup mini chocolate chips
1/4 cup toffee bits
1/4 cup pecans, chopped
If you’re using fresh apples, sprinkle lemon juice over them after they’re cut to prevent browning. Prepackaged sliced apples will have an anti-browning agent, such as calcium ascorbate, added.
Arrange sliced apples on a pretty serving dish.
Melt marshmallow creme and butter, stirring constantly. Pour over sliced apples.
Heat caramel sauce in microwave for 30 seconds or until pourable. Pour over apples.
Sprinkle chocolate chips, toffee bits and pecans over apples.
