This recipe is so simple, I hestiated to post it. It sort of falls into the “folks don’t need to be told how to make a baloney sandwich” category. But it is so good and I hope you are inspired to make it. I plan to eat it everyday for the rest of my natural life. Ok….that’s a bit of a stretch. But, I am going to be eating it a whole heaping bunch for the rest of my natural life. The taste is impeccable and it’s chocked full of vitamins and minerals. And….my son and husband both like it. Score!
First, fire your grill up on high.
Since this is a Romaine lettuce salad, you might have guessed that we would need some Romaine lettuce. Wash it and stand it upside down to drain.
I stripped away a few of the outside leaves until I got to the compact leaves.
Cut each head in half and trim just a little of the bottom. Don’t trim aggressively or your head of lettuce will fall apart. That would make you mad.
Drizzle olive oil all over both sides. Sprinkle 4-1-1 Seasoning generously.
Place on your hot grill grates. It only takes about 3 or 4 minutes per side. You just want to get a nice light char and create some smoke that gives this lettuce the most incredible flavor. Only turn one time. You don’t want to flip them back and forth because the head will fall apart on you. That will make you mad.
As soon as you take it off the grill, grate a bunch of good Parmesan cheese all over. Once you get a bunch of cheese grated all over, grate some more. I picked some tomatoes from our garden and threw them on top of the lettuce. We ate some fresh radishes along with it, too. I don’t think it needed any more dressing. You dress it however you like. It’s your lettuce.
I just have to laugh when I think what my grandparents would say about eating burned lettuce.
