In addition to my husband’s dill pickle fascination, he has a similar fascination with frozen breaded flounder. Everytime we go to Sam’s together, he wants to buy a box of these. I’m not really sure why. I think he believes this is something he can make on his own if the snakes finally get me once and for all (if you aren’t following the snake stories, you are missing loads of fun!). I don’t believe he has ever attempted to cook this fish. But, we always have them in our freezer. I have a preference for wild caught seafood over farm raised. That’s just my bias and I’m not trying to impose that on anyone….except my family. The last time we were at Sam’s, my husband (Sam, too!) pointed out gleefully that his favorite breaded flounder was wild caught in Alaska. “That makes it good, right?” he asked. So, once again, we buy the frozen flounder , throw it in the big freezer in the garage and let it sit there until I pull it out to cook before it gets freezer burn. The fish is baked in the oven for about 25 minutes. It’s really not too bad. For a quick supper, I will bake the flounder, make grits and have some kind of vegetable..
Tonight, I used Sam’s (and Sam’s) fish for fish sandwiches. I have to tell you…I was surprised how good these sandwiches turned out. Of course, we are a generation that grew up on fish sticks that were made from who knows what. Maybe the fish tasting part of our palate isn’t exactly refined. I served them with Comeback Sauce and Homemade Tartar Sauce plus lettuce and tomato. I use good whole wheat buns, drizzled them with olive oil and toasted . For sides I had homemade sweet potato chips and Yukon gold chips. This fast meal was really a crowd pleaser.
