Summer is a season for laid back living and cool refreshing treats. Peach Cobbler No-Churn Ice Cream satisfies both requirements. Peach cobbler and ice cream is nothing new. That’s a favorite combination is everybody’s book. Try this twist on the old favorite and build peach cobbler inside the easy-to-make, no-churn vanilla ice cream.
Use packaged shortbread cookies and prepared peach pie filling for shortcuts. No use working up a sweat if you can help it. There’s plenty of reasons to get hot and sweaty in the hot summer months, making ice cream shouldn’t be one of those reasons. That’s not right.
I served this ice cream at a luncheon I prepared for my friends. They must have liked it pretty well. I brought a bunch of empty bowls back to the kitchen. Maybe they were hot and wanted to cool off. Maybe the Peach Cobbler No-Churn Ice Cream was so good they couldn’t stand to leave a drop.

Peach Cobbler No-Churn Ice Cream
yield: one loaf pan
1 (14 ounce) can sweetened condensed milk
2 tablespoons vanilla extract
1/2 teaspoon ground cinnamon
1 (21 ounce) can peach pie filling , divided
2 cups heavy whipping cream
peach slices for garnish
Additional whole shortbread cookies for garnish
Break the cookies into small chunks and set aside.
Pour condensed milk, vanilla and cinnamon into a small bowl. Add in a couple tablespoons of pie filling. Stir until mixed.
In a large bowl, beat whipping cream, with an electric mixer, until soft peaks form.
Soften the condensed milk mixture by adding a dollop of whipped cream and stir until blended. This will make it easier to fold it in the whipped cream.
Pour the condensed milk mixture into the bowl with the whipped cream. Gently fold in the whipped cream.
Layer whipped cream mixture, cookie pieces and pie filling in a standard size loaf pan. Start with half the whipped cream, sprinkle half the cookies next and add dollops of pie filling. Gently swirl the cookies and pie filling into the whipped cream. Repeat with the remaining ingredients.
Place plastic wrap directly on the surface of the mixture to prevent crystals. Freeze until firm, at least 6 hours. Overnight is better.
When firm, serve with fresh peach slices and a shortbread cookie.

Are you supposed to fold in all of the whipped cream into the condensed milk after you stir in the dollop? Not clear on that because it doesn’t say.

Thank you for bringing this to my attention. Yes, I left out a step in the instructions. After stirring in a dollop of whipped cream, pour the condensed milk mixture into the bowl wiht the whipped cream. Gently fold in the whipped cream.
