How we love our summer tomatoes. And spring tomatoes. And fall tomatoes. Our backyard tomato growing season in central Florida is spring and fall. It’s hard to keep our tomatoes going through the harshness of summer. Perhaps I’m actually a tomato instead of a person. I have a difficult time throughout the harshness of Florida summers, too. Anyway, when our tomato bounty starts rolling in, I love to use up 3 pounds or so and make this Homemade Basic Tomato Sauce for use later.
This sauce is best if you can use more than one variety of tomato. That’s my personal preference. I recommend using multiple varieties of produce whenever possible.
I’m so glad I came along well after the era when folks thought tomatoes would kill you dead.
As long as I can get my hands on plenty of good, vine-ripened tomatoes, I slice them to serve with most of our meals. I slice up cucumbers to eat along with them but this post is starring tomatoes, not cucumbers. But, they are really good friends.
Make this basic sauce and freeze it for tomato goodness anytime you want. Don’t ever let good tomatoes go to waste.

Basic Homemade Tomato Sauce
yield: 2 pints
Easy to make basic sauce with fresh or canned tomatoes. Use any variety of tomato; mix and match for extra flavor. For Basil Tomato Soup, add fresh basil, chicken stock and cream. For meaty spaghetti sauce, brown your meat of choice along with onions and garlic, add tomato sauce and let simmer.
2 medium sweet onion, diced
2 tablespoons unsalted butter
3 pounds tomatoes, diced
1 tablespoon honey
1 teaspoon 4-1-1 seasoning
1/2 teaspoon dried Italian seasoning
1 bay leaf
Cook onions over medium heat in butter until onions are soft and translucent.
Add tomatoes with their juices.
Add remaining ingredients and simmer for 30 minutes.
Remove bay leaf and puree with an immersion blender or transfer sauce to a blender or food processor.
Store in refrigerator for up to 10 days or freeze in freezer safe containers.
