“Eat and Grow Thin” Dressing
2 tsps. dry mustard
1/8 tsp. cayenne pepper
2 tbsps. flour
2 cups boiling water
1/2 cup cold water
2 tsps. salt
4 tbsps. sugar
1/4 cup lemon juice
4 egg yolks
Mix the dry ingredients together: beat eggs and mix with the cold water and add to the dry mixture: strain to remove any lumps, now add the boiling water slowly, stirring all the while, and then add lemon juice and put into a double boiler and cook till as thick as cream (do not let boil for it will curdle), take from fire, cover to prevent a crust forming and beat occasionally till cool. Put in a covered jar and it wil keep indefinately. If too thick, thin with water or lemon juice. This is especially good for cole slaw or dressed lettuce. Add a diced hard boiled egg to dressing if it is to be used in dressed lettuce. Use dressing to suit individual fancy.
