Creamed Spinach with Crispy Shallots
Using frozen spinach makes this dish a snap to prepare.
1 average size shallot, minced
2 10 oz boxes frozen spinach, thawed
olive oil
1/2 cup half and half
1 tablespoon buttermilk
1/2 cup grated parmesan cheese
salt and pepper to taste
Drizzle olive oil in hot pan. Saute shallots until tender but not browned. Add spinach and saute until the water is cooked out. Add half-n-half and buttermilk and simmer for 5 minutes. Mix in parmesan cheese.
For crispy shallots:
1 shallot, sliced thinly
flour
salt
cooking oil
Season flour with salt. Have cooking oil at medium high heat. Dredge shallots in flour and shake off excess. Drop in hot oil and fry until crispy. Drain. Sprinkle on top of creamed spinach.
