So….right about now, the hurry and scurry of Thanksgiving is over and you’re trying to arrange the leftovers in your refrigerator and make room for more stuff. You find a cranberry bag in your vegetable crisper containing a handful of cranberries and you utter, “What on Earth am I supposed to do with this little pittlin’ handful of cranberries I have left over?”
Make oatmeal.
And thrown them in the water as it boils, along with brown sugar, to make a light cranberry syrup.
It will make you feel good about yourself and give you a break from all the pies, cakes, casseroles and breads we sampled to make sure they were right for Thanksgiving before we even got to Thanksgiving Dinner.

Cranberry Oatmeal
yield: two servings
A wonderful fall treat for breakfast.
2 cups water
1 tablespoon brown sugar
1/2 cup fresh cranberries
pinch of salt
1 cup quick cook oatmeal
honey
Place water, brown sugar, cranberries and salt in a small saucepan. Bring to a boil, stirring occasionally. Let boil, uncovered, until the cranberries start to pop.
Stir in oatmeal and reduce to medium heat.
Cook for 1 minute, stirring occassionally.
Cover, remove from heat and let sit for 2 to 3 minutes.
Pour into a bowl. Drizzle with honey.
