Baked Glazed Ham
The ham I bought for Easter Dinner this year was so big it barely fit into my oversized cast iron Dutch oven. It was 12 pounds of deliciousness. The brand was Cumberland Gap which I’ve found to be consistently good.
I made up a glaze. The ingredients are rough estimates. Nothing was measured, just eyeballed.
1/2 cup firmly packed brown sugar
2 heaping tablespoons apricot preserves
2 heaping tablespoons Dijon mustard
Place the glaze in a small saucepan and simmer until the sugar dissolves.
Score the ham and stud with cloves.
Brush on some glaze. Put about 1/4 cup water into the Dutch oven. Bake covered for 10 minutes per pound at 325 degrees
During last 30 minutes, uncovered and baste with glaze every 10 minutes.
Let rest for at least 15 minutes before carving. Longer if you can stand it.

I used Smithfield Ham from my local grocer and it’s a good one. If I ever see a Cumberland Gap I’ll give it a try!!
