On a dark and rainy Saturday morning, I waited as long as I could for the rain to stop. Arugula was ready for harvesting and the season would end soon. I had a frittata in mind that would make good use of a few handfuls of arugula leaves. The rain wasn’t cooperating with me so I had to harvest in the rain. One of the many benefits of a kitchen garden is easy and quick access. I put a hoodie jacket on over my pajamas and headed out to harvest arugula. My inner child’s quite happy anytime I play in the rain, but especially if I’m wearing my pajamas. Playing in the rain while wearing pajamas and harvesting from my kitchen garden is happiness overload. It’s like you’re getting away with something. I can’t quite explain it but it’s a real thing. Arugula Tomato and Goat Cheese Frittata was in the making and I didn’t even know it yet.
So, I grabbed a few handfuls of arugula, marched back into my kitchen and began to seek other ingredients for my frittata. I came up with sweet onion, tomatoes and goat cheese. A bunch of colorful radishes make a nice accompaniment. I will trim up a few and dip them in salt to cut the bitterness.
This is my favorite way to cook. Plan your dish or menu around your harvest. Isn’t that the way it’s supposed to be?

Arugula Tomato and Goat Cheese Frittata
yield: 2 servings
Preheat oven to 350 degrees.
The number of vegetable combinations possible is endless. Use what you like and what you have on hand. I love the tartness of the goat cheese. It adds a punch of flavor. Don’t overcook the frittata or it will be dry. As soon as the center sets, it’s ready.
1 tablespoon cooking oil
1/4 sweet onion, chopped
6 to 8 cherry tomatoes, halved
2 cups arugula, cleaned and dried
4 eggs
1/2 teaspoon kosher salt
1/4 teaspoon pepper
2 ounces goat cheese
Heat oil in an oven safe medium skillet. Add onions and tomatoes. Saute until onions are soft.
Add arugula and sauté until wilted.
Add salt and pepper to eggs and whisk well. Pour eggs over vegetable mixture.
Dot top with goat cheese. I find it easy to use two spoons. Scoop goat cheese on one spoon and push it off with the other.
Bake for 10 to 15 minutes in a 350 degree preheated oven until the center sets Don’t over cook.
Taste for seasoning and adjust.
Serve warm or at room temperature.

I’ve never had arugula in a frittata before but tons of goat cheese. I’ll give this a try and see how I go. 🙂

If you like arugula fresh, I think you’ll love it sautéed. I like to throw it in soups, too. You can use it pretty much like you do spinach.

You’re such a nut…I can just see you out in the rain, harvesting, humming a little song, getting wet feet! Yup, the only sad thing is, I wasn’t there to do it with you…I love being out in the rain, driving, walking, sleeping to, you get the picture!! And i especially love a good thunderstorm. There!! Now you know what kind of a nut I am!! 🙂
