For fruit that’s not very flavorful, cooking the fruit is my preference over eating it raw. I love fresh fruit and you rarely find our fruit bowl empty. But, fruit that’s not picked at peak harvest sometimes fails to reach peak flavor. Know what I mean, jelly bean?
We bought a package of plums this week and, to my disappointment, they had very little flavor. I slice them up, along with a Granny Smith apple and topped them with a simple oatmeal, butter and brown sugar topping.
Cooking those plums made all the difference in the world. I could actually taste them after cooking instead of the flavorless fresh version. Of course, the oatmeal crumble topping didn’t hurt anything either.
This recipe is so easy to put together, you can make it for breakfast on a busy morning. If you want to assemble it the night before, go right ahead and keep it in the refrigerator until ready for use. For the make ahead version, toss fruit that oxidizes with a little citrus juice.
The possibilities of fruit and berry options are endless. I would caution against bananas unless they’re mixed with a fruit that’s juicy. Then, again, they might be perfectly scrumptious in this recipe. They have a low water content so I’m uncertain about how they’d come out in a recipe that doesn’t have liquids. The fruit in this recipes essentially stews in its own juices which helps to bring out the flavor. I’ve never dripped banana juice down my arm, so…….

Apple and Plum Oatmeal Crumble
Preheat oven to 350 degrees
yield: 4 to 6 servings
Substitute your favorite fruit or berry in this utility recipe. You’ll want to refer to it time and time again. Perfect for breakfast, brunch, dessert or snack.
1 baking apple, peeled cored and sliced into sixteenths
3 to 4 plums, sliced into eights
1 cup quick cook oatmeal
1/2 cup brown sugar
4 tablespoons (1/4 cup) unsalted butter, cubed
1 teaspoon ground cinnamon
1/2 teaspoon kosher salt
Arrange apples and plums in a greased 8 or 9 inch pie pan.
Add oatmeal, brown sugar, butter, cinnamon and salt to a medium bowl. Rub in butter with your fingers, or use a pastry cutter, until the butter pieces are about the size of peas.
Sprinkle oatmeal mixture over fruit.
Bake in a 350 degree preheated oven for 40 minutes or until the top is brown and the fruit is bubbling.
Remove from oven. Serve warm or at room temperature.
