Warm Salmon Salad
This salad is fit for a King/Queen and is ready in less than 5 minutes and uses 4 ingredients. It’s one of my favorite salads. This is fast food!
Start with a bowl of dressed greens. I used Spring mix and Mrs. Dull’s “Eat and Grow Thin” salad dressing. Toss the greens well to coat.
Season a salmon fillet. I simply use kosher salt. Nothing else. Heat a pan to medium high and drizzle in some olive oil. This 6 oz. Coho salmon fillet only needed to cook for two minutes on each side. The worst thing you can do is to overcook the salmon. If your salmon is thicker, you might need another minute on each side. Look at the thickest part of the salmon on the cut side. You can tell when it’s halfway done because the salmon changes color.
Place on top of the dressed greens while the salmon is still hot. I picked a few fresh tomatoes and threw in, also. Eat immediately AND eat often. This is a fine dish.
