Salmon Patties
A dish as remininscent of my childhood as Pimento Cheese (pimmenocheese). We had these a lot. They’re cheap and quick to fix. I fed them to my 21 month old grandbabies tonight and was delighted to see them lap them up. I don’t think they got their fill, either. Nana will be cooking them some more Salmon Patties when they come back. Speaking of come back, those babies could just about drink Comeback Sauce. It goes perfectly with Salmon Patties.
Skin and debone one7 1/2 ounce can Wild Alaska Pink Salmon. Add one egg, one finely diced shallot, about 3 tablespoons self rising flour and 1 teaspoon Season-All Seasoning (one of my Favorites). mix well. Drop by tablespoons into a hot skillet with about 1/4 inch light olive oil. Flatten out with the back of a spoon. Cook until browned on both sides – roughly 4 minutes per side. The cooking time will depend on how thick you make your patties. Serve with Comeback Sauce.
