My husband is an iceberg lettuce fan. You’re not going to convince him to give it up for some of the more nutritional salad greens. I like a wide variety of greens including salad greens as well as cooked greens like collards, turnips and mustard.
No, I didn’t accidentally leave out kale. It was on purpose. There’s a long list of favorite greens I’d have to go through before I finally get to kale.
Anyway, back to salad greens and my husband. He loves his iceberg lettuce. As far as he concerned, grocery store produce departments can save a whole lot of space by getting rid of all the “fancy” lettuce in favor of iceberg. His definition of fancy lettuce: anything other thaniceberg. One of my favorite ways to eat iceberg lettuce is Wedge Salad with Buttermilk Blue Cheese Dressing. And, I think it’s the best lettuce choice for hamburgers.
I have absolutely nothing against iceberg lettuce. We eat it a good bit. I’m just a “throw me a little bit of variety” girl. On the other hand, my husband could eat the same thing everyday for rest of his life and not get food fatigue. So, I’ll enjoy iceberg lettuce as I describe above and, additionally, pick up baby spring lettuces and Romaine for salads when they’re not growing in my garden.
Wedge Salad with Buttermilk Blue Cheese Dressing is so simple, it probably qualifies as an idea, or suggestion, more than a recipe. You wash, dry and cut a head of iceberg lettuce into wedges, drizzle on Buttermilk Blue Cheese Dressing, sprinkle on tomatoes and crumbled bacon. Add more blue cheese crumbles if you’re of a notion.

Assorted heirloom varieties of cherry-type tomatoes are stunning in a Wedge Salad. They add color and texture with their variety of shapes and hues. I used two varieties of cherry-type tomatoes in this photo but they’re both red. That’s what I had on hand so that’s what I used.

Wedge Salad with Buttermilk Blue Cheese Dressing
Yield: 4 to 6 serving
Make sure the lettuce is as dry as you can get it after it’s been washed. This will help the dressing stick to the lettuce instead of it all sliding off onto the plate. Use a variety of heirloom cherry-type tomatoes if they’re available.
1 head iceberg lettuce, washed, drained and patted dry
Buttermilk Blue Cheese Dressing
pretty little tomatoes (or pretty big tomatoes chopped)
6 to 8 sliced cooked, crispy bacon
Blue Cheese crumbles
Cut head of iceberg lettuce into 4 to 6 wedges
Drizzle blue cheese dressing over lettuce. Top with tomatoes and crumbled bacon.
Sprinkle on additional blue cheese crumbles.
