A refreshing beverage is a treat in any season but they’re most appreciated in the summer. Everyone enjoys a rocking chair on the porch with a summer sipping cold beverage in their hand. I tweaked Chef Smith’s recipe just a touch to make it more blackberry-ish. You just can’t have too much blackberry in your life and I’m not talking about the communication device.

Sparking Blackberry Lemonade
*Inspired by The Diabetic Chef® Chef Chris Smith
yield: two servings
1/2 cup fresh squeezed lemon juice
1/2 cup blackberries
6 packets Equal® sweetener
10 ounces sparkling water
ice cubes
blackberries, lemon slices and mint for garnish
Place lemon juice and blackberries in a food processor or blender and purée. Pour through a mesh strainer into a pitcher.
Add Equal® and sparkling water. Stir.
Pour into a glass filled with ice.
Serve immediately.
