From Alabama to Florida, I’ve lived the vast majority of my life near the Gulf of Mexico. As such, seafood has always been a staple in our diet. Shrimp boils were as commonplace as the humidity of Deep South summers. They were a social event for my parents who’d invite friends over and cook several pounds of shrimp outdoors in a large, cast iron kettle. I’m inclined to boil shrimp as part of a Frogmore Stew. Needless to say, I’ve consumed my share of boiled shrimp in my lifetime. My boiled shrimp consumption, most likely, includes the share of several other folks, as well. We’re a family of shrimp eaters.
Given my affinity for shrimp, I was delighted to say yes when my friends at Zatarain’s asked me if I’d like to participate in their National Shrimp Day Campaign which is on May 10. Zatarain’s wants to showcase shrimp in easy to make and versatile recipes.
Their products offer a variety of ways to bring flavor and ease to mealtimes. They’ve been at it for over 125 years. I’d say they must be on to something. Their Crawfish, Shrimp, and Crab boil bags are frequent residents of my spice cabinet.

Cilantro Lime Rice mix caught my attention right off the bat. I whipped up a quick marinade that contains fresh lime juice and lime zest,honey, and Zatarain’s Creole seasoning. Then I skewered peeled and deveined shrimp and marinated for 15 minutes before grilling. Zatarain’s Cilantro Lime Rice mix complements the shrimp making it a first-rate meal. I garnished with fresh cilantro and lime slices. Give this recipe a try and it will become a family favorite.

Skewered Marinated Shrimp with Cilantro Lime Rice
yield: 5 to 6 servings
A creamy lime marinade for the shrimp creates a flavor that go wells with Zatarain’s Cilantro Lime rice mix. A quick meal that is easy and flavorful.
1/2 cup mayonnaise
1/2 cup vegetable oil
1/4 cup lime juice – about 4 medium Persian limes
2 tablespoons honey
2 teaspoons lime zest
1 teaspoon yellow mustard
1 teaspoon Zatarain’s Creole seasoning
1 pound large shrimp, peeled and deveined
1 box Zatarain’s Cilantro Lime Rice Mix
Whisk together first 7 ingredients in a bowl for the marinade. Set aside.
Divide shrimp between 5 or 6 skewers. Place on a baking sheet.
Coat both sides of shrimp with marinade and let sit in the refrigerator for 15 minutes. You’ll have marinade leftover.
While the shrimp marinates, prepare Cilantro Rice Mix according to package directions.
Cook skewered shrimp on a hot grill or grill pan for 2 to 3 minutes per side or until shrimp turns pink.
Serve shrimp over rice mix.
