My introduction to French Toast came early in my childhood. I spent the night at a friend’s house and the next morning, my friend asked me if I wanted French Toast for breakfast. I had no idea what it was. Well, my young friend proceeded to make it for us. I remember the cinnamon-y aroma and how the bread slices puffed up a little as they cooked. Once I finally got to taste it, I thought it was heavenly. Considering my friend’s youthful age and lack of considerable cooking experience, it wasn’t cooked to technical perfection. But, I loved it anyway and loved my friend for making it for me. I’ve made lots of French Toast since and I’d like to think I’ve stepped up my game with Overnight French Toast with Fresh Blueberry Orange Syrup. Unlike my friend’s burned exterior and mushy insides, this French toast cooked up perfectly with golden brown exterior and soft custardy inside. After sitting in the refrigerator overnight soaking in the custard, the bread slices are ready for a hot griddle.
Cook them in butter until both sides are golden brown. Enjoy the warm vanilla, butter, and cinnamon aroma as they cook. Honestly, just sniffing that comforting and pleasing smell will make you feel good. And you haven’t even tasted them yet.
Let’s take this French Toast over the top with a little help from Wish Farms’ fresh and sweet blueberries. Those fresh little berries are looking for some citrus action and I’ve got just the ticket for them. I picked a few late season oranges from my backyard tree. Fresh squeezed orange juice and sweet blueberries combine with sugar, vanilla, and lemon (or lime juice) for a homemade syrup that’s out of this world and so easy to make. When looking for perfect flavor pairings, you never go wrong with sweet and tart. If you have leftover syrup, try it over ice cream.

Overnight French Toast with Fresh Blueberry Orange Syrup
yield 15 (1-inch thick) slices
Slice the bread and the night before , cover it with orange custard and allow it to chill in the refrigerator overnight. In the morning, heat up your griddle and cook French toast and make a quick fresh blueberry orange syrup.
6 large eggs
3/4 cup fresh squeezed orange juice
1/2 cup half and half
2 tablespoons brown sugar
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
1 loaf French bread, cut into 1 inch thick slices
1 to 2 tablespoons butter
Place all ingredients, except bread slices, in a medium mixing bowl. Whisk until all ingredients are well incorporated.
Arrange the bread slices in a single layer in a large pan. Pour the custard sauce over the bread slices. Flip them once to make sure they’re well coated. Cover with plastic wrap and leave them in the refrigerator overnight.
The next morning, heat up a griddle or pan to medium.
Add butter to griddle. Start with one tablespoon and add more if needed.
As soon as the butter is melted, place French toast slices on griddle.
Cook 2 to 3 minutes or until side down is brown. Flip and repeat, adding more butter if needed.
Cook until second side is brown and the center is firm to touch.
Remove and serve warm with Fresh Blueberry Orange Syrup.
Fresh Blueberry Orange Syrup
1 cup fresh squeezed orange juice
1 cup sugar
1 tablespoon cornstarch
1 tablespoon lemon or lime juice
1 teaspoon vanilla extract
2 to 3 cups Wish Farms’ blueberries
Add all ingredients, except blueberries, to a small saucepan. Whisk together well.
Add blueberries and cook, over medium heat, until sauce is thickened, stirring occassionally.
