Pimm’s No. 1 is an 18th century concoction created in England by oyster bar owner, James Pimm. It’s gin based and contains liqueur, spice and fruit juice. The actual recipe is a big secret known to only a handful of people.
My introduction to Pimm’s Cup Cocktail was from Mrs. Eryl Hadler, wife of my husband’s boss. Eryl, Welch by birth, occasionally hosted proper English teas at her house. It was at one of those teas that she served Pimm’s Cup Cocktail. I found it to be refreshing and a fitting beverage for summer. It’s a popular beverage at the Wimbledon Championships. I’ve never been to Wimbledon, but I can close my eyes and pretend as I hold a frosty glass of Pimm’s in my hand.
Serve the cocktail over lots of ice. Garnish with cucumber, lemon or lime and mint.
Look for Pimm’s No. 1 in your neighborhood package store. Anything coming out of a package store should be sipped, not guzzled, regardless of how refreshing it is.

Pimm’s Cup Cocktail
yield: 4 servings
Look for Pimm’s No. 1 at your neighborhood package store.Mix with lemon-lime soda or ginger ale.
8 ounces Pimm’s No.1
16 ounces lemon-lime soda or ginger ale
4 (5 inch long) English cucumber spears
lemon slices
fresh mint
In a pitcher, mix together Pimm’s and lemon-lime soda (or ginger ale)
Fill 4 tall glasses with ice. Add a cucumber spear and lemon slice to each glass. Fill with Pimm’s mixture.
Garnish with mint.
