5 Cup Fruit Salad

5 Cup Fruit Salad is a simple vintage recipe that's a  great make ahead and is perfect for any occasion. As the name suggests, it only contains five ingredients. Chill at least four hours before serving.

Ingredients

  • 1/4 cup sweetened shredded coconut for toasting optional
  • 1 cup canned pineapple chunks drained
  • 1 cup canned mandarin oranges drained
  • 1 cup miniature marshmallows
  • 1 cup sweetened shredded coconut
  • 1 cup sour cream

Instructions

  • Add 1/4 cup shredded sweetened coconut to a dry skillet over medium heat. Stir constantly until browned.
  • When browned, remove to a bowl and set aside.
  • Drain pineapple and mandarin oranges.
  • Add sour cream, one cup untoasted coconut, half of toasted coconut, and marshmallows to a medium size bowl. Stir until well blended.
  • Add pineapple and mandarin oranges.
  • Gently fold in so as not to break the fruit. Cover and chill for at least four hours before serving.
  • Remove to a serving dish and garnish with remaining toasted coconut.

Notes

The additional of toasted coconut is optional. I find it gives a layer of more intense coconut flavor and some added texture.
