Sweet and Sour Meatballs

Ingredients

  • yield: about 40 meatballs
  • make the meatballs:
  • 1 pound lean ground beef
  • 1 pound ground pork
  • 1/2 cup panko breadcrumbs
  • 2 large eggs beaten
  • 1/2 cup whole milk
  • 1 medium size sweet onion finely chopped
  • 2 tablespoons grated Parmesan cheese
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons garlic salt
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon freshly ground pepper
  • 12 ounces pineapple preserves
  • 1 cup ketchup
  • 1/2 cup sweet Asian chili sauce
  • 3 tablespoons teriyaki sauce
  • 3 tablespoons cider vinegar

Instructions

  • Preheat the oven to 400 degrees. Use a broiler pan or a rimmed baking sheet fitted with an oven safe rack. Spray with cooking spray. Set aside.
  • In a medium mixing bowl, mix together all ingredients.
  • Roll into 1-inch balls and place 1 inch apart on the prepared baking sheet. Bake for 20 to 22 minutes, or until no pink remains.Drain off any excess fat.
  • In a medium saucepan, mix add all ingredients. Heat over medium heat until preserves have completely melted.
  • compose the dish:
  • If serving immediately, add the cooked meatballs to the sauce gently stir to coat with the sauce. Simmer gently for 20 to 30 minutes, then keep warm until serving.
  • To slow cook: place the cooked meatballs in a slow-cooker and pour the warm sauce over the top. Simmer on low for 2 hours, then keep warm until serving.
  • COOK'S NOTE: If using frozen meatballs in a slow-cooker, increase the cooking time to 4 hours on low, or until the meatballs are heated through.
