Taco Salad
I know there was a whole lot of eye rollin’ going on when you saw that I posted a recipe for Taco Salad. I could see you. Some of you were saying, “We don’t need a dadgum recipe to make Taco Salad. We can do that in our sleep. Jackie has run clean out of recipes to post if this is the best she can come up with.” And then I heard some of you saying, “Taco Salad! That’s not Southern cooking!” Well, y’all just hold up a minute and let me get to my point. Yes, I know that Taco Salad isn’t a classic Southern dish. But we need to have a break ever so often from peas and cornbread. My Granny loved to cook her “boiler full of spee-ghetty” occasionally and eat a “slice of peezer (pizza) pie”. Variety is good! I wanted to make Taco Salad so I could share my recipe for Homemade Taco Seasoning with you. I add a good palmful to one pound of browned ground beef that has been drained. Next, add 1 teaspoon of corn starch to 2/3 cup of water and stir until dissolved. Pour that into the ground beef and stir well to make sure the seasoning is evenly distributed.
To assemble the Taco Salad:
Crumble some taco shells in your plate. We almost always have some broken ones in the package so this works out well! You can use tortilla chips, too. Next, add shredded lettuce. Meat goes on top now. Add diced onions, then tomatoes. Sprinkle on some grated cheese. Top with taco sauce, salsa, Pace picante sauce or something similar. Of course, you can add sour cream, avocado….whatever suits you. You don’t have to follow the same order as me. It’s perfectly acceptable to put onions on top of the tomatoes. Really, it is.
Now, if you want the best rub you’ve ever had for pork, then mix this Homemade Taco Seasoning half and half with brown sugar. Rub all over the pork roast, cover securely in plastic wrap and park in the refrigerator overnight. The next day, roast it or smoke it cook it the way you normally cook it .This is especially good for Boston butts. Now we are back to talking about eating pigs. Can’t get more Southern than that…now can you? <wink> I’m baaaack!
