In reply to Jackie Garvin. Cream would have been skimmed from the top of fresh milking. Perhaps churned the way butter was or whipped by hand. Perhaps manual egg beaters existed in the 1500s ?

They would have whipped by hand. I don’t know if they’d use vanilla beans or vanilla extract. Vanilla extract is made by soaking vanilla beans for several weeks in a spirit such as vodka or bourbon. It’s not unreasonable to think they would have the ingredients to make vanilla extract.

How did English in 16century make, this is the recipe I would like to try the same why they did. No electric mixers. cream had to be made. Did they use vanilla beans? Thanks you

I’m thrilled you found us and our fool! I don’t know why this dessert fell out of favor. It’s more interesting than simply adding fresh whipped cream to fruit and not much more trouble. I say, “Bring back the fool! “
