Hi Michelle,

For guidance on canning, you should consult a reputable source on food preservation such as Ball or The National Center for Home Food Processing. Both have great websites.

You can certainly use canned yams but the cooking time would be reduced. Canned yams are cooked.

What you know as yams are, more than likely, sweet potatoes. Yams are have a dark skin with with white starchy flesh. My favorite varieties of sweet potataoes are orange or reddish orange skinned.

Looks really good and I want to try this recipe. We love sweet potato. But can you tell me what kind of potato you used? I live in Central Oregon and we have yams, usually three different kinds. Does it make a differance or should I just buy the variety that we usually eat?
Thanks for your reply.
