Roasted Yellow Squash, Zucchini and Onions
The squash in my garden hasn’t come in yet but I can get local squash in the grocery store. I like to roast just about any vegetable I can get my hands on.
I started with 1 zucchini, 4 small squash and a piece of a sweet onion. Slice them all up. Make the onions a little thicker than the squash because they cook faster.

Toss with olive oil and 4-1-1 seasoning .Roast at 450 degrees for 20 to 25 minutes. Stir a little after the edges start to brown. Remove from oven after they reach your desired degree of brownness.
All sliced!
Sprinkle with a little bit of chopped fresh parsley. Dig in!

This would make a great pasta salad. It also makes a great pizza topping, too, with a soft cheese like goat cheese.
