In reply to Tricia B.. Tricia, It’s very easy to serve around the peas unless the person has such an aversion that they can’t tolerate the sight of them. If that’s the case, whole kernel corn might be an option.

Hey Jackie, I would like to make this for a “potluck” gathering come St. Patrick’s Day and there is a person who does not, will not, eat anything green so I was wondering if you could give a suggestion, substitute for the English Peas? I think I could probably get away with the cabbage in this recipe… unnoticed by this person… I don’t know. I know I could probably leave the English Peas out, but not sure of a substitute for them – like another vegetable. Now that I”m thinking about the cabbage I’m not sure if I could get that past the certain person who hates greens. Personally, for me, I’m not crazy about the English Peas either, but I will eat them in this recipe. Thanking you in advance for a substitute suggestion of the English Peas – leave out w/o replacing them with anything else green or…?

This is a nice alternative to beef or lamb for a St.Paddy’s Day celebration. I love that it’s a one pot meal.
