I've never heard them called ground nuts before - guess they didn't know about that in Lower Alabama!! LOL. Jean,

Without the baking soda, it's taffy. In fact, there's a story floating out there that says the way peanut brittle was discovered is that someone was making taffy and accidently added baking soda. I'm not sure how one would have such an accident but somebody seems to think that happened! :)

The baking soda makes it full of air. I expect it would be hard to eat if you didn't have it. It looks yummy!

I suppose ground nuts is a better description for peanuts than goobers. :)

Jackie,

One of my true joys at Christmas is when Mike Williby hands me a bag of his brittle at church. I love the brittle, enjoy gushing over it in front of others (for Mike), and get especially excited when he does a second batch later in the season!

Who knew the joys of groundnuts?

Jean,

It's really easier than you think. The main think is to have everything lined up and in it's place prior to cooking. Also, you need a big enough pan that it's not going to overflow once the baking soda is added. I hope you will try it. I love the texture of this peanut brittle. I add a tiny bit more baking soda than most recipes and it keeps the candy from getting so hard. It's crunchy! :)

Karen,

If you have a recipe that's tried and true then stick with it! Cooking's all about finding something you love, perfecting the recipe and then sharing the love. You have one lucky FIl! :)

Jackie, my FIL expects my homemade peanut brittle every year for Christmas. When I say expects, I mean he will grab his tin of peanut brittle and take it straight to his hiding place. Although I will say, I do all my heating of sugar and syrups in the microwave. Takes no time at all and comes out great! I also use freeze dried peanuts and use less salt.

Jackie I do not doubt that homemade anything is better than what comes from the store. I,however, have not gotten brave enough to try that yet. It doesn't look quite as scary when you do it. Maybe one day!
