Beef and Bean Chili
I usually triple this recipe. You will want more than one meal from it. It’s better the second day plus it freezes well. Don’t be afraid of using lots and lots of chili powder. That’s where the good flavor comes from. I frequently will buy canned tomatoes that have added herbs and spices. That only adds more flavor to the chili! This is a family favorite. If you like spice, use Rotel tomatoes or add some pepper flakes, or do both!!
1 lb lean ground beef
1 large onion diced
1 lb can kidney beans (drained)
1 lb can diced tomatoes
8 oz can tomato sauce
chili powder to taste (I use LOTS of it)
garlic powder to taste (start with a tsp)
salt and pepper
Brown and drain ground beef. Pour into soup pot. Cook onion until soft and add to beef. Add remaining ingredients and mix well. Taste for seasoning before adding salt since the canned products contain a good bit of sodium. Cook over low heat covered and stir occasionally.
