French Onion Soup Sandwich

Once of my mother’s quick go-to meals was onion burgers.  She would mix brown ground beef with onion soup and serve it on hamburger buns.  That’s where I got the inspiration for this dish.  It’s basically a hearty, deconstructed French onion soup.  I made this for my husband the first time tonight.  He came back for seconds!

1 pound lean ground beef, browned and drained

1 can French onion soup (NOT dry onion soup mix)

1/2  tsp dried time or 2 tsps fresh thyme minced

splash of Sherry

4  hoagie rolls

olive oil

Swiss cheese

Brown and drain one pound of lean ground beef. Add one can of French onion soup, sherry and thyme. Simmer for about 10 minutes. You don’t want all the liquid to cook out.

In the meantime, get your rolls ready. Hollow out the center being careful not to cut through. Make a boat.

Waterproof the boat by coating the inside with olive oil.

Fill ‘em up with the meat mixture.

Add Swiss cheese to the top, or Gruyere, or whatever you like. It just has to melt nicely and taste good to you. Bake at 350 degrees for about 10 minutes until the cheese is melted.

Oui, Oui! That’s French for “Let’s eat!”

My husband and I both liked these sandwhiches…..the only thing we would do different the next time would be to add mushrooms under the cheese, they remind me of Runza sandwhich in Lincoln, Ne and they have the best mushroom burgers and so we would add mushrooms the next time. We loved everything else about this receipe.

      Gayla,
Mushrooms would be a PERFECT addition for this sandwich. I’ll have to try that next, too. Thanks for the inspiration!
